Coconut (Ma Phrao):
The coconut palm is a plant characteristic of tropical coasts, being grown essentially world-wide in our days. Consequently, its role in the cuisines of tropic peoples can hardly be overestimated. Furthermore, coconut products have been well-established in the production of sweets, where their importance is not restricted to low latitudes.
Cooks in tropical Asia make multiple use of coconut products: Coconut water is drunken directly out of the unripe fruit as a common refresher; the grated and dried endosperm is used to thicken sauces and the oil pressed from the endosperm is a popular frying medium. From the sweet juice obtained by cutting young stems of several palm species palm the tasty palm sugar is obtained alternatively. Yet the coconut product most important for cooking is coconut milk.

Garlic chives (Kui chai):

Tofu (Tao Hu):

Tofu, also known as soybean curd, is a soft cheese-like food made by curdling fresh hot soymilk with a coagulant. Tofu is a bland product that easily absorbs the flavors of other ingredients with which it is cooked. Tofu is rich in high-quality protein, B-vitamins and low in sodium. Firm tofu is dense and solid and can be cubed and served in soups, stir fried, or grilled. Firm tofu is higher in protein, fat and calcium than other forms of tofu. Soft tofu is good for recipes that call for blended tofu. Silken tofu is a creamy product and can be used as a replacement for sour cream in many dip recipes.
Qualification: Tofu has ying force, creamy and sweet. Tofu is good for weak body, decrease phlegm from bronchial asthma or bronchitis, anti-inflammatory, helps stomach or small intestine ulcer, contains a hormone that helps fight breast cancers, ovarian and prostate cancers and moderates hot flashes in menopause.
