About Pad thai Thip Sa-Mai
Thipsamai Pad Thai Restaurant was established on September 9,1966.
It started the business as a small shop selling Pad Thai ( Chantaburi
noodles with big shrimps and fried eggs) located at the pavement
of the Maha Chai Road near Samranraj cross road, Bangkok. Mrs. Samai
, the shop owner, is from Kratoomban District, Samutsakorn Province
in the western part of Thailand. Her family main income is from
the selling the fruits of her garden. Every morning, she had to
help her mother transporting the fruits to the market by a small
boat through Pasi Charoen Canal and Maha Chai Canal and coming back
home at sun set in the evening. With great responsibility to her
family, she also accepted works of any kinds offered to her in order
to support her parents. This, indeed, makes her become a hard working
woman. At home, she had the best opportunity to learn from her mother
the right ways of cooking Thai food in traditional styles. That
is the reason why Thai food cooked by her is extroaditional delicious.

Having married with Mr. Chote Baisamut ,she then moved to her husband's
hometown at Maha Cai Disdrict. Here she learned more about cooking,
especially Pad Thai using Chanburi noodles with big shrimps wrapped
by fried eggs, from her husband's mother. Her pad Thai is very famous
not only to Maha Chai people but also to those with great interest
in taking delicious Thai foods.
Mrs. Samai and her husband had strong desire to move to Bangkok
in order to introduce her famous Pad Thai to the people in Bangkok.
Therefore, she made a decision for her first small shop of Pad Thai
located on the pavement of Samranraj Road in Bangkok. At that time,
only two dishes of Pad Thai were served, ie., a normal dish and
a special one at only Bth.1.50,and Bth. 2.00 respectively !. Having
a great number of customers who are in most favor of Traditional
Style of Pad Thai cooked by her and some inconveniences in the rainy
season,
Mrs.Samai then hired one building nearby as for
her first "Pad Thai Restaurant". As time passed by, the
building owner had a certain hiding interest to run its own business
on "Pad Thai" Therefore, the building owner has increased
the rent rate every year in order to force her to move out.

Mrs.Samai and her husband do not want to move to
other places in Bangkok for two reasons that they do not want to
make their old customers to be disappointed if no met her for most
delicious her "Traditional Style of Pad Thai". Another
reason is that she does want the new customers as advised by their
friends have the opportunity to taste "The real taste of her
"Traditional Style of Pad Thai". Mrs. Samai therefore
chooses to run her own "Pad Thai Thip Sa Mai Restaurant"
just near the former one. The present restaurant is open on the
great day of September 9, B.E 2509 (1966) (*Most Thais believe that
number 9 is the lucky number.)
Mrs. Samai and her husband have two main policies
in cooking "Traditional Style of Pad Thai" as follows,
(A ) This " Thip Sa Mai Restaurant "
has to concentrate on the food' quality, ie., its freshness, deliciousness
and cleanliness.
(B) Be most royalty to the customers
